Description-
The Miyabi 6000MCT 20cm Gyutoh Chef Knife brings genuine Japanese blade craftsmanship into the everyday kitchen, purpose-built for effortlessly slicing and cutting meat and fish. At its heart is a blade core made from Microcarbide MC63 powder steel, embedded within two layers of steel to achieve a hardness of approximately 63 on the Rockwell scale — the international standard unit of measurement for hardness. This construction gives the blade exceptional strength while keeping it fine enough for precision work.
CRYODUR® ice-hardened blades take performance further still, offering particularly good cutting edge retention, strong corrosion resistance, and optimum blade flexibility, so the knife holds its edge through repeated use without becoming brittle or unwieldy. The authentic Japanese blade profile features a striking Tsuchime look, a hammered finish that's as functional as it is beautiful, helping to reduce food sticking to the blade as you work.
Balance and comfort haven't been left to chance either — a dimensionally-stable pakkawood handle, finished in a sophisticated dark wood look, delivers perfect balance and outstanding comfort, allowing for genuinely fatigue-free cutting across all techniques. The symmetrical blade is finished with an ultra-sharp Honbazuke edge, delivering the kind of incredible sharpness that makes light work of even demanding prep tasks.
Whether you're breaking down proteins or working through fine slicing tasks, the Miyabi 6000MCT Gyutoh Chef Knife combines serious Japanese blade technology with a handle built for comfort, making it a genuine step up for any home or professional kitchen.
